This looks like a good recipe to try out in winter weather before spring arrives. My cousin Ronnie made a roasted root vegetable recipe courtesy of Dr. Weil - see here http://www.drweil.com/drw/u/RCP00221/roasted-root-vegetables.html - that was pretty tasty, too, and the roots were well-received to boot. She mentioned a factoid before Thanksgiving dinner: apparently parsnips were something of a staple food in medieval Europe. Parsnips and turnips can be good additions to stews, as well, unless I'm mistaken.
